I didn't say because neither of those encompasses everything he can do. If anything, he comes across more as a paladin to me.
For one thing, he's a warrior who could channel white mana, which is basically divine magic. And while he didn't have a formal oath, he dedicated himself to protecting others by throwing himself into the thick of things (and even running himself ragged) out of a deep-seated need to atone for leading his friends on Theros to their deaths due to his own hubris.

Gideon doesn't gain life every turn. You just can't damage him most of the time. In the few instances someone got past his magical aura, such as with Bolas and Ob Nixilis, he nearly died.
Yea when did Nixilis and Bolas get by his invulnerability aura?
Ob Nixilis nearly drowned him by planting his face in a puddle in the Battle for Zendikar storyline (see at the end of this article here), and Nicol Bolas flat out pierced his aura with one of his claws and gave him a bad puncture wound in the Amonkhet Hour of Devastation storyline (which you can see in the Gideon section of this article here).
