Is this a complete character respec or just multiclassing into Fighter? If so what is the level split, what other options have you chosen and how did he fight as a blood hunter?
If you're going classical samurai I say nab a greatsword and just retheme it to be a katana. Then nab the Great Weapon feat for the extra damage and other boosts.
My favorite Samurai build was my dual weapon Battlemaster (went with human variant to get disk weapon feat). If you want to be more lethal then multiclass to an assassin. Stick with medium armor with medium armor master feat.
For the kind of samurai you want I've actually found a way to make a decent one. Levels 1-4 take monk. At the ability/feat point of the decision take the lucky feat or prodigy, skilled and mobile are also acceptable. Choose the xanathars guide monk archetype kensei. Then put 3 levels into fighter. Take the battle master archetype (samurai is acceptable but meh,) choose whatever maneuvers you see fit. Personally I prefer parry, riposte, and disarm. Take 1 level into rogue (just cause that extra 1d6 sneak damage, reflavor it to be that "final killing blow" type of attack) then level into fighter until the next ability improvement. Take one of the aforementioned feats you are lacking. Throw alternating levels into monk and rogue (take assassin or swashbuckler archetype) until level 20. You should end up with a few pages worth of cool abilities and the extra rogue levels increase damage and give a lot of stat bonuses. Hope it helps!
Note: if you want to speed up the process and instead of taking a bunch of feats instead of ability improvements you could always make a human variant character so you get the free feat.
As well, my DM ruled a katana as a versatile and finesse weapon, which is totally cool with me, but if you take monk kensei it is irrelevant.
You could also re-flavor your greatsword as a Zanbato (i.e Sanoske of Ruroni Kenshin, Guts of Beserk). The good news is that %e gives you the freedom and flexibility to build your samurai
Battlemaster is always a solid choice for Fighters. You can create a wandering Samurai who has trained in many different temples and has taken techniques from the many opponents defeated.
Samurai subclass for simplicity and convenience.

A great sword is more closely related to a NoDachi. A Katana is actually about 2 inches shorter than a europian long sword. A Waksashi is about the length of a roman gladius. The only real differences between the different swords is the weight.

If you're not going to use a shield, you might as well use a greatsword.

Another option would be to take the Polearm Master feat and then use a Glaive or Halberd.

If you wanna base it a little off of history, a great sword would be called an Odachi. Or you could go with a glaive/halberd and call it a Naginata.
