I want to roleplay a former soldier who spends his life now studying and reading, because thats what I actually am in real life. I want to keep my primary damage dealing coming from physical attacks with weapons though, and I want access to plenty of non damage focused magic. most multiclass options Ive seen seem to be for creating fireball throwing heavy armored knights. I dont want that. Nor do I want to be a healer. I am not a paladin. I want a guy who knows how to use physical weapons and has magic abilities concerning utility, social interaction, buffing, advising etc... So suggestions would be appreciated please.
Unfortunately the fighter based magic user requires most of your spells to be evocation and abjuration (damage and defense) so your main choices are multiclass fighter, arcane trickster rogue, sword/valor bard, ranger, hexblade warlock.
Why not stick with fighter and pick up the Ritual Caster feat and/or the Magic Initiate feat? I think one or both of the feats would give you the feel you want.
Otherwise, I would suggest going to fighter 6 (for the additional ASI), and then multiclassing into bard. Bards get plenty of 'non-damage' spells.
Valor Bard with a level or two dip into fighter would be a pretty good option to get some extra options like action surge and fighting style boost. Blades would be a more damage focused option rather than getting some extra support from Valor. Something to keep in mind if you take a bit of fighter is whether you want to be a predominantly strength based and start as fighter for heavy armor, or start as bard and go with a little bit of dexterity as well.
Something that could be interesting would be Dueling from College of Blades, and Protection from Fighter for a little sword and board support in the front lines, defense for extra AC would be the other option to couple with College of Blades.

Elven Bladesinger might be an option worth considering, with soldier background of course :)
ETA: another consideration is a Dwarven mage, which provides some martial training due to ancestry.
Perpetually annoyed that Eldritch Knights can't use Eldritch Blast, Eldritch Smite, and Eldritch Sight.
