D&DBeyond is now owned by Wizards of the Coast, who are working on the next set of core books, so they don't care about that old stuff. You'll have to homebrew a janky feat or magic item to grant you the spells you would swap into.
The example shown is Clockwork but works for Aberrant Mind too. This vid shows how to swap the spells when needed. This is easier and neater (aside from being a clunky workaround).
I also have an update with an alternative method here. This method basically turns all of them into choices to select. This method is clunkier but works better if you already know you are going to be changing most of the spells.

Just a thought about this: many of the default spells don't actually match the restrictions that come along with adding new spells to replace the existing psionic spells, so the second video you posted doesn't actually let you select the default spells for an abberrant sorcerer's psionic spells list... It also doesn't look like it's restricting the schools of magic for the spells either.

Yes, which is why you should only swap spells if you want to swap them. I did say this. The purpose of the video isn't to cover the feature in detail - it's just to show you how to do it.
As for schools, I did mention that you cannot restrict by schools.
It's a homebrew workaround, it can only do so much. ¯\_(ツ)_/¯
