I can see some benefit for those preferring pencil & paper, making your own sheets specific for the character.
But I can't see it being too popular given how much time it takes for something so basic. And an entire waste of time (other than possible enjoyment for those who just like doing it) for those who play digitally like, on D&D Beyond.

I often do for my 3.5 edition characters. That edition is so... Odd about the way you use your character sheet. About half the sheet is useless for any given character, and you need another page or two of extra stuff depending on your feats and stuff.
5e doesn't really have that issue unless you're doing something really weird. And the bounded accuracy means you have a decent shot at stuff you're not built for, so you ought to have those stats handy.
That said, I did make a sheet for my resource tracking when I had a lot of different ones. My last character had racial spells, class spells, channel divinity, lay on hands, hit dice, a bag of tricks, a wand, a ring of spell storing, and eventually a legendary item with charges. Yikes!
Cool! I like to hand draw them just for fun and also I like to give them to players when I DM so I can make sure they have all their info in a way that I like.
