Variants are used when you're changing some fundamental of the main race.
Take a look at humans - they get +1 to all stats. Variant humans change this and add a feat.
Subraces are used where you want a group of races, with some common stats. You can only use subraces of the race.
Take a look at Elves. It's not possible to play just an Elf, you have to select a subrace. They all have the stats assigned to "Elf" in common though: +2 Dexterity, Darkvision, Keen Senses, Fey Ancestry, Trance
I have been wondering what exactly the difference is between subraces and variants of a particular race. Could someone tell me?
Sub races are lore based, they actually and truly exist.
Varient races are optional things you can choose your players to have and/or are a changed version of something else
Marvarax and Sora (Dragonborn) The retired fighter and WIP scholar - Glory
Brythel(Dwarf), The dwarf with a gun - survival at sea
Jaylin(Human), Paladin of Lathander's Ancient ways - The Seven Saints (Azura Claw)
Urselles(Goblin), Cleric of Eldath- The Wizard's challenge
Viclas Tyrin(Half Elf), Student of the Elven arts- Indrafatmoko's Defiance in Phlan
