Hey, so does anyone know why Tieflings didn’t even get updated in Monsters of the Multiverse? Every other race has the option to select which ability scores they want to boost except tieflings. I’m kind of baffled this got missed.
Because Tieflings are a Player Handbook race, none of which got revised yet, because those revisions will be in the next edition of the Player's Handbook.
It should be noted: the early release for “OneD&D” (located under “Sources”) provided new options for the Tiefling race.
These are, of course, just playtest versions…so they are not official & are subject to change…but they were concocted by WotC for players to try out.
Notably, they provide three different subtypes for Tieflings…Abyssal, Cthonic & Infernal.
I actually enjoyed the variety…Infernal is the nearest to what we know to “current” tieflings; but both “Abyssal” and “Cthonic” tiefling types provide different “looks” beyond what has been established.
I like the broadening of Tieflings in the One D&D packet, but I also miss the Tiefling lines that were reflective of specific Devils accounted for in MtoF (don't really miss them, I use them quite regularly). I think with the Tiefling and some of the other plane touched species seen in One D&D, I think we might see a resolution where plane touched characters wind up with a lot of flexibility in design; or at least I'd to see that.

They're really not hard to homebrew out if you use the existing PHB Tiefling as a template. Plenty of guidance on how to navigate the tools in the Homebrew subforum.
