Where is the current list of DDB Maps compatible source books? Is there a schedule for making older content available? Are the tokens from the source books also available?
A current list can be found here and the intent is to update it over time as new sourcebooks are added.
No, there isn't a schedule, but they are being backfilled over time.
Yes, if you own a sourcebook (maps doesn't support shared content at this time), you will be able to access tokens for all monsters in that book. If the monster has official art, the token will display that art.

Slightly connected to topic. Will the new ravenloft maps ever be made available as content to Curse of Strahd owners outside of the Maps program?
No such plans have been announced at this time
