I purchased the Explorers guild to wildmount subclasses and spells about an hour ago but they're not in my subclass list when I try to make a new character. We start session 1 in about 20 minutes, anyone know how long I'll have to wait before I can select cronurgist mage from the wizard subclass? (were starting at level 5)
I had to enable critical role content which is bull crap because I don't want the other critical role stuff on my character
Nothing goes on your character unless you put it there. Those switches don't change that. They're just there for some very broad strokes content management. I'd prefer they were enabled by default, or that your settings were saved instead of reverting every time, but otherwise they do what they're supposed to.

I just picked up a single item (Amulet of the Drunkard) from the Explorer's Guide to Wildemount, and I also had to enable the Critical Role content to be able to see it. I'm guessing there is a problem with this specific source book?
What problem? The sourcebook is from Critical Role. If you turn off/leave off Critical Role, then it will disable that sourcebook.

I didn't realize that--Thanks! Being new to D&D, I expected the Critical Role content to say it is so in the title, such as in "Critical Role: Call of the Netherdeep".
Yeah, sometimes it is confusing. For that book, it says it in the blurb. Thinking about it, the book you mention does have it in the title, so even if people realise that they're both CR, they might think that they're of different statuses (ie that EGtW is actually a part of D&D canon that happens to be written by Mercer et all, whereas CotN might be effectively 3rd party but is nonetheless sold by DDB for whatever reason). That could cause confusion, if you think CR content is just what you consider 3rd party material.
I'm still navigating the ins and outs of this kind of thing. I'm not sure of how CR fits in with canon. But yeah, they're both CR and therefore affected by the toggle. Given the confusion, I feel like there should be a dialogue box that comes up after purchase to remind you and give you the option to turn on CR content. That might cut down on the people thinking that the system isn't working and getting frustrated that it's not appearing.

How did you resolve this? I just purchased Needle of Mending and its not available
