I notice that books and adventures tend to have maps of Faerun that vary from publication to publication. IS there any one map I can use in my campaign that is 'accurate' and consistent? If this has been asked before, my apologies :)
Depends; consistent with what? Is the map consistent with itself? Probably; it's difficult (but not impossible!) to make a map that isn't self-consistent. Consistent with previous maps? Unfortunately, the likelihood of finding two different maps from WotC that actually agree on things is staggeringly low. There may be some out there, but there are no guarantees.
That said, I believe the map of the Sword Coast region from Storm King's Thunder is currently considered to be the 'most accurate'/'most complete' map of that region available, at least in terms of the 5e adventure paths/etc.
