I am a new player and DM, and I have a 3rd-level Oath of Devotion paladin of Tyr. I'm thinking about getting one level in Druid soon, but I feel like this is too early. I was thinking about doing it at 5th or 6th level, but what do you guys think?
I like doing it early as you can get the benefits of that second class early on and doesn't feel like it hurts you as much since levels come faster the lower you are. It does also delay your progression of course and puts you behind the rest of your group power wise (delays 3rd level spells and extra attack mainly), and of course it'll delay your ASIs. I try and plan out my characters that I will multi-class with to make sure I minimize the impacts but anytime you multi-class it's going to delay you in some way.
In your situation I'd look at what is it you're trying to gain by the multi class and how far are you wanting to go in it? I would at least stay Paladin to 4th level for the ASI, but if you stop there you miss out on extra attack at 5th level and aura of protection at 6th. Again it's really what's the trade off you gain by getting druid and deciding it that's worth what you'd miss out on.
You're always going to find a reason NOT to multi-class. So honestly you'll never find a perfect time to multi-class so you should just do it when it feels right for the character.
I would do it at 6th. You might wanna ask your DM how he/she rules about the druid metal restriction though because if he forbid any metal armor and there no alternative you might end up weaker/limited in your defense.
In my opinion Druid isn't a very powerful dip for a paladin. You would be stronger going fighter, cleric, or barbarian. Warlock, sorcerer, and bard pick up more spells without going MAD.

There is no rule that says druids can't wear armor
There is a guideline that they won't want to.
There's a rule that they don't want to.
A class's proficiency section isn't a suggestion. Those are rules.

A wizard can put on armor, without proficiency.
True but they can't cast spells if they do that.

Generally speaking 3rd level and 5th level are huge power spikes in a class. I'd stick with pales in until 5 for the extra attack.
What about multiclassing into druid interests you?
