I'm guessing that at some point the limits of normal animal biology just hit a wall. Anything that would realistically challenge a group of fantasy characters in that power range stops being a normal animal and becomes as "monstrosity" instead.

100% this. Level 11+ characters are fighting aberrations, monstrosities, fiends, dragons, giants, and other scary powerful monsters. They're not concerned with mundane animals. An aboleth is only CR 10 and that's already a pretty scary thing to go up against.

Turns out we're going up against one of those, and I'm torn between trying to figure out how to beat it (without metagaming) - and, just refining my backup character...

Has anyone wondered why there are no Beasts with a CR of 9 or higher? Is Polymorph too difficult to deal with at a certain point?
Maybe beyond a certain point, it's just easier to put those beasts (Tarrasque) into other categories.
