While fighting with his companions against a green dragon, the monk cast wall of fire to encircle the dragon. He wanted to get out of the way of the dragon so used his Shadow Step ability, then his cloak of shadows to hide from the dragon, all while maintaining concentration on the wall of fire spell. The dragon flew out of the circle to attack the monk, but the monk complained that he couldn't be seen by the dragon due to the cloak of shadows. He was essentially invisible while concentrating on a spell that was causing damage, which seemed unfair to me, but hey, he's a monk, so maybe it's all possible?
Neither Cloak of Shadows or Shadow Step require concentration so the use does not break concentration on any spell previously cast.
Monks can use Helm of Brilliance, as can any character. It is not considered armour, it is a wonderous item and offers no non-magical bonus to AC.
Dragons have Blindsight which allows them to detect their environment without the need of sight. Invisibility only works on sight - so it is useless within the range of a Dragon's Blindsight.

1. Neither Shadow Step nor Cloak of Shadows are spells, let alone concentration spells so they wouldn't affect an ongoing concentration
2. Helm of Brilliance isn't armour, so a monk can totally use it
3. Being invisible doesn't make it so you can't be targeted, just that attacks have disadvantage against you. This wouldn't affect a dragons breath weapon; they're just breathing in the general idea where they think the monk is based on their other senses
