Could a Dragon Flesh Golem be possible? A horrible amalgamation of dragon body parts and mechanical pieces. It would obviously be a super boss. Could such a thing be created? And what do you think of this idea for a monster?
Up to DM. It would be homebrew. It sounds neat (and horrifying).
It would probably be very rare and take years to collect and preserve enough parts. Dragons don't just die every day and they mostly stay in secluded areas where they are safest and strongest.
The cult of dragons might have the easiest time (given they cooperate with a handful of evil dragons). But some other wide reaching cult with members powerful enough to actually kill a dragon might be able to make them.
Getting I to the homebrew stats of the thing, may I suggest multiple mouths (probably have to borrow parts from lesser dragons like wyverns) and a breath weapon (just 1 element) that is a sphere centered on itself instead of a cone or line.
And if you are using wyvern parts, maybe put a stinger on one of its limbs for a sting attack.
Of course it depends on party level how strong you want to make it, but taking a flesh golem swap the 2 slams with a wyvern's claw and sting attacks (range 5 still). Use a young dragon of your choice as basis for the breath weapon I mentioned (not part of the multiattack) and damage immunity (I wouldn't use fire just to keep the flesh golem weaknesses relevant). And lastly a fly speed (and maybe another movement based on young dragon type). And done, one horrific abomination.
This is one of the reasons I love D&D so much. LOL.
I'd start with the details about the story behind this creation to held decide what stats and powers to give it. Maybe the goal is a twisted offering to Tiamat, and so the necromancer is trying to recreate her likeness by pulling together the bodies of one of each of the chromatic dragons so you end up with an undead version of Tiamat herself. Or maybe they're metallic dragons, as the offering included the death of her enemies, and so you change the breath weapons. Maybe this was a failed attempt at lichdom? Or just an evil curiosity of what the melding of two different types of dragons would look like? Maybe this is an artificer who always wanted a pet dragon, and created this undead nightmare in their obsession!
Or somewhere....someone is trying to create the Faerun version of a Chuck E Cheese filled with animation singing monsters. Horrific puppets of dragons that run through programs meant to delight but actually only horrifies those who visit. Only then to have those creations actually come to life and bring REAL terror!

Yeah. I was gonna use it as the magnum opus if a necromancer and it would be the final boss of my upcoming campaign.
