I'm thinking stuff like the fiend warlock for 1 level for the temp hp on knock down and the necromancy wizard's hp on kill. Maybe death cleric 1 level for reaper. but I wanna have them at least have a little martial ability, so maybe like eldritch knight or some kinda paladin. I know it's reeeeaaaally MAD but I wanna try it someday. What else do you think I could throw in there or should? Maybe some to get rid of?

Oathbreaker paladin, almost anything warlock, shadow sorcerer, and death cleric would be all in theme for him. Maybe conquest paladin instead.

I would take heavy inspiration from specifically the conquest and Oathbreaker paladin. Also from a death cleric and (maybe) shadow sorcerer.

Conquest seems pretty fun. And thank you for the suggestion of shadow sorcerer too. Probably gonna take 1 level into conquest, 2nd and 3rd into death cleric and shadow sorcerer, then go back to paladin and put the rest into that. Still might toss one of those levels into fiend warlock just for the temp hp though. Idk.

I'm an idiot, heavy armor master doesn't just make you proficient with heavy, it needs heavy proficiency. Still taking that.
Also, some spells require a melee attack, and to make that you would need to spend an interact to get it back to 2 hands, but you use the interact action when you put it to one hand. So the spell would automatically fail.
Though now that I think of it, I think I'll do oathbreaker because of flavor. I broke the oath before dying and things starting and start advancing farther into blasphemous activity, becoming a warlock by making a pact with a powerful devil, shadow sorcery, but then wishing for redemption as I take a level into cleric, but being denied, so I go to a different god entirely, giving up and then continuing my levels into oathbreaker, despising my old god and going out for myself now. Doing only things I know they would hate.
Technically those spells require a material component... namely the weapon you use. And the same hand that is used to access the material components can be used for somatic components during spell casting.
Less technically I find it hard to have a DM that would argue on the conponents in this case. I can't (and I don't want to) imagine "Green Flame Blade" or "Booming Blade" to have some weird gestures... to me the fantasy of these spells is more like shouting / speaking a command word during the attack with the weapon
Mechanically Hexblade would help you to get around with less attributes than Fiend, since Hexblade allows you to channel Cha into your Melee attacks.
That requires three levels of warlock for Improved Pact Weapon if you want 2h weapons, though. But you can always use a versatile longsword for those 3 levels :-)
I think this is a nice option, since Paladins are notoriously spread thin on ability scores and this allows you to basically turn the MAD Paladin into a SAD Deathknight.
Would still need at least 13 wow for cleric, and 14 str for heavier armor, only 14 because heavy armor master takes it to 15 with the +1, but I do like that idea. That way I can focus my abi after feats on one stat. And hey more casting is never a bad thing. Could take another invocation to help with it too. And another if I decide 5 levels is worth it.

Probably gonna go with variant human with either war caster or heavy armor mastery for the 1st feat.
Now that I think about it I think I'll put 4 into paladin before doing the split to the other 3 classes, just to get the one not gotten above.

Sounds good! just make sure not to drift to far away from the basic idea of a death knight, a paladin that died before redeeming himself.

Why do you want Warcaster when you are using 2H weapons? Just for the bonus to concentration saves?
You can cast somatic spells on your round just holding the weapon with one hand. At least I've yet to see a DM rule against that.
I'd rather pick Sentinel / Polearm Master / Heavy Armor Master as first level feat. :-)

Decided to bump cleric up to 2 for death cleric for channel divinity too.
