You only have one reaction per round unless you have a feature that makes an exception. Once you’ve spent your reaction to make an attack of opportunity, you no longer have it to make any more. The only such exception I’m aware of is the cavalier’s 18th-level feature.
SagaTympana is right. But you can ask your DM if they would be willing to include a homebrew feat like Pathfinder's "Combat Reflexes", where you can make as many AOO as your Dex modifier.
It should be reasonably balanced, given that you miss out on one ASI or other feat for it and have to have a high Dex to profit from it. And the feat does not give you extra reactions, just extra AOOs.
Making multiple opportunity attacks is too powerful for a feat that can be taken at any level and it's already an 18th level Cavalier feature.
That is your opinion. It really isn't that strong and the Cavalier level 18 feat is imho way too weak for a level 18 feat. I mean, a single fireball probably causes more damage than the 5 AOOs this feature would give you, and the Cavalier one only gives you 2 AOOs.
Yes, spells are limited. On the other hand, the amount of monsters in an encounter stupid enough to trigger those AOOs should also be quite limited.Usually, the monsters will either walk around the person with the feat, out of their range or focus on that person to bring them down quickly.
And this feat would allow martial characters to actually become somewhat able at keeping the enemies at bay and give them a nice layer of complexity so they can keep up with the casters.
If you're that worried about it being taken too early, you can still say that "Sentinel" is a prerequisite.
But all of this is obviously homebrew, which is why the DM should decide if it is possible or not.

It lets a fighter hit and potentially kill an unlimited amount of minions at no cost.

The Cavalier gets a reaction each turn which means they effectively have a reaction for every single enemy. Spell slots are limited and Fireball can cause friendly fire.

You're making some awfully big assumptions here. Monster behavior and encounter composition is highly variable from table to table.

Unless the players have a choke point, which is an extremely basic tactic that's easy to pull off in indoor situations.

Those aren't significant problems in my experience, but either way there's gotta be better ways to address those issues than highly exploitable and narratively questionable mechanics that circumvent the game's action economy.
The game's built around most of the action occurring during your turn, and characters with Sneak Attack, War Caster or Great Weapon Master can create some pretty devastating situations if they're allowed multiple op attacks.

Do you get multiple oppertunity attacks if several opponents leave your reach in one turn?

The Cavalier feature gives you as many AoOs as you have combatants. There is no upper bound on it.
