I was hoping to block my players access to them in my campaigns (I typically share since I have all the core books). They don't seem very well balanced.

I started playing D&D from the basic box set in 1979.
If you don't use any other Critical Role content in the game, insisting your players do not enable Critical Role content in the character maker will make the Gunslinger inaccessible, and I presume the Critical Role guns. Be aware that firearms and antimatter rifles and the like do show up in the DMG.
Honestly, it's entirely your prerogative as a DM to say "no firearms, no high tech weaponry from either Critical Role or the DMG (maybe Eberron or Ravinica)." If a character suddenly whips out a gun in combat, it's pretty clear they're violating the parameters of your game. It's the easiest thing in the game to say no to in that regard.

What book are the Exandria weapons in? I can find them on the website here, but it doesn't show range, misfire, reload, etc...

Try either the free Gunslinger subclass (under Fighter), Critical Role: Call of the Netherdeep, or the Explorer’s Guide to Wildemount.
