With Tasha's we've been given te option to make variant races for all races, with a +2 to one stat and a feat of your choice.
My question is how does this work out for Dragonborn and their inherent resistance based on their background and their breath. I know there's already a variant for dragonborn pre-Tasha's where dragonborn can give up their breath attack for a fear attack. And while I'm fine giving up the breath attack in exchange for a Feat as variant race, I'm less inclined to give up my resistance which is a passive based on my scale colour, whereas the breath attack is an active thing you can give up on more easily.
Why would you use custom lineages for dragonborn? Just use the rules for customizing your origin (all that will permit is changes to ability scores and languages, as the dragonborn doesn't have any other proficiencies).
Well, what is it you're looking to do, exactly? If what you're looking for is to keep the general stats the same but replace your breath weapon with the roar from the Dragon Fear feat, it technically isn't supported by Tasha's, but as a DM I would allow it.

TCOE's origin customization of an existing race only gives the option to reassign ASIs, languages, and proficiencies. In regards to the dragonborn, TCOE only allows you to reassign ASIs and languages, as the dragonborn as a race have no proficiency with anything. Breath Weapon and Damage Resistance cannot be swapped out.
There are no variant dragonborn races that swaps a Breath Weapon for a fear attack. Draconblood dragonborn swaps Damage Resistance for Dark Vision and Forceful Presence. Ravenite dragonborn swap Damage Resistance for Dark Vision and Vengeful Assault.
Dragonfear Feat does not swap out your Breath Weapon. Whenever you use your Breath Weapon, you have the option to either deal damage or to frighten enemies.
Thanks for the clarification folks! I Really like the Dragonborn lore hence I'm playing one but was wondering whether I could've swapped the breath attack for a feat, but I guess not if I'm going by this thread. I'll see what my DM's final say is as well on the matter
Hmm I actually think it's a legit question. The custom origin would allow him to take a feat (and other stuff) and base the race on a dragonborn.. Assuming the reading of custom origin to mean that you still qualify for racial feats for the race you based the custom origin on.. He'd qualify for the feat that gives hm the fear breath..
Of course. the problem is that the feat says that you expend a use of your breath weapon trait.. which he does not have.. making for a strange result... I guess you'd end up with an ability to do the fear roa, but no "resources" to spend on it.. so you couldnt actually use the action... sort of like getting a spell but no spell lots to use it.
Of course you'd be giving up your resistance aswell..
No, since when using custom lineage you are mechanically not a member of any official race (you can customize it lore-wise/appearance-wise as you wish ofc), your race is "custom lineage" not dragonborn.

I think I agree with that.. I've just seen some discussion assuming otherwise.. I think the fact that this feat in particular kinda breaks without the racial features, supports the idea that you're not ment to be able to take it.

it was an example I gave of how different source books already “modify” your breath and I merely wanted to ask if taking a feat as custom lineage Dragonborn would or would not take away my breath and resistance

Rules as Written, if you go with custom lineage then you don't have a breath weapon or resistances. You only get what is listed under custom lineage.

If you use the Custom Lineage, the custom lineage features are all you get. End of discussion.
If you want to play a dragonborn and reassign your ability score bonuses, you can do that instead.
