Eh... there is technically the way they did Drakewarden's pet... built into the feature itself with custom actions and the "limited use" stuff to replace HP. It would be A LOT of work to recreate it as multiple options like you appear to want, but not impossible.
The only other option is just to build a stat block and add it via "extras" on the character sheet, I suppose.
I can't seem to add homebrew monsters to a subclass feature that I am trying to make. Any fixes?
