I was wondering, does the ability to group our homebrew races and sub-races together exist?

Not mechanically, no.

I suggest defining at a campaign level any restrictions on whether certain subclasses can only be taken by certain races/subraces and doing so by just writing up those rules for everyone in the campaign, as you would any other campaign rules.
