Trying to do the impossible, at least how it is currently set up. Might change one day, but all item homebrewing is set up to tie to an officially recognized item in 5e. You can add whatever modifiers you want, but you can't change the core item that is the basis of your homebrew. It's probably the only way to make sure that your item still functions as it should in relation to feats, fighting styles, etc.
Knowing that, I think I can use the light crossbow base and then just add 2 instances of the normal damage. It functions the same, just fires 3 bolts instead of 1. It does fire single shots. and Takes an action to reload.
Staff have mentioned that they are going to look at the ability to homebrew base items (weapons / armor) and I am sure they will communicate plans when that's happened. :)
If I can just be "that guy", 3d8 damage on one attack it's A LOT of potential damage, and allow those 3d8 to be dished out every other turn makes any other direct ranged attack (weapon or magical) basically obsolete.
A case could also be made that with Crossbow expert the Action reload can be notched down to a Bonus Action, if not disregarded.
If I can give a suggestion, I think 3d4 could be a better fit in terms of damage, leave it at normal Loading property and add a Special noting that the weapon does not benefit from Crossbow Expert. You still get a minimum of 3 damage on a hit, but a lower maximum output of 12, avoiding the risk of making other ranged attacks useless, but still keeping the weapon competitive and useful.
It's just my opinion, of course, but I really think 3d8 is a tad too much...
I am trying to make the triple shot crossbow from dark souls by having a light crossbow do 3d8 instead of 1d8.
But when I make this, it only shows as either 1d8 (standard crossbow) or 1d8 and then 3d8 underneath.
I am editing the correct values but can't seem to remove the original crossbow damamge value, even when it is removed from the creation table.

You might want to say something like the following:
"Upon a hit the creature takes an extra 2d8 piercing damage. As a result of multiple bolts being fired."
