How to have both the bonus modifiers but have the +6 only vs. undead?
There isn't a way to set a conditional modifier like "an additional +1 to hit vs undead" within the current magical item homebrew system, sorry!
It might be worth noting that magical weapons in 5th edition Dungeons & Dragons are bounded at +3 for the most powerful weapons.
To set the +5 though, you would add a modifier of BONUS -> MAGIC
