I made a variant minotaur race and I changed a number of the traits in addition to the description. All the things I have added appear as I expect them to, but when I pick the race as one of my characters, above everything I added is the following header text:
The minotaurs of Ravnica are strong in body, dedication, and courage. They are at home on the battlefield, willing to fight for their various causes.
Since I change the ASI as well as several of the racial traits, that text is no longer accurate. And besides, I'd rather ditch the Ravnica text altogether since it is out of place with the rest of my race's description. Where can I find that text to remove it?
If that's my only option to get rid of that inaccurate text then yeah, I will have to create a race from scratch. But as it is a variant race, it would be nice to have the original as a template to pull from. Do all subraces do this? Or is this situation unusual?
Perhaps I am misunderstanding the difference between a subrace and a variant race then. When I look at the base Half Orc, I see it gets +2 STR and +1 CON and then I look at the variant Mark of Finding Half Orc and I see it gets +1 STR, +1 WIS and +1 of my choice. It seems to me that the ASI for the MoF Half Orc does indeed replace the racial description and some bonus features. The ASI and ability replacements on my variant race function properly and as intended on the character sheet. I just don't understand why I have to include an irrelevant and misleading paragraph at the top of the details page describing the ASI for the base minotaur race that does not apply to my variant race.
Don't get me wrong. If that just is the way it is and cannot be turned off, then I will build my race from scratch to get the result I'm looking for. I am surprised if that is the preferred resolution to this problem since it seems unnecessarily cumbersome.

"Not all those who wander are lost"
You could try making it as a new base race instead of a variant or you could just ignore it. I'm not sure how this site handles grouping races.

All subraces will pull the racial description and bonuses from the base race, as the subraces are intended to add onto that, not replace it.

Mark of Finding Half Orc is a variant-- I was answering the question regarding subraces.
