I think that awakened shrubs are always ok, and you can flavor it with different kinds, like a berry bush. And I also like playing awakened animals, so I usually pick beasts of 1 or lower CR, usually not as high as 1. That however is me, an I like playing with low stats.
As for how to play em, I like using their stat blocks as is, using the health a class would give, and keep their attack actions and things like amphibious as racial skills and abilities. I don't do the things like stealth bonus crabs get, or saving throw proficiency though.
Go large constrictor snake and have Kaa from jungle book:
or maybe frog/toad and go for Hypnotoad:
Now the spell doesn't say that the creature or plant becomes magical so you might be able to blag then turn the toad into a familiar for some spell shenanigans. so if this was to be a character you wanteed to play you could have been a animal that was awakened then turned into a familiar and then maybe have soem class levels in wizard (enchantment) etc
