Old Chinese Kung Fu movies had martial arts styles that had special moves and strikes like Mad Monkey, Scorpion, Mantis, Lobster, Crab, Tiger, Snake, Eagle Claw, Crane, Leopard, Dragon and Rat to name a few.
I'm thinking on making new ones to fit with the monster manual. What fantasy beast/monstrosity styles do you think could work and sound good?
You're suggestions all seem great, I definitely see Wyvern ,Dragon and Chimera as the kind of animals that would get styles based on them. I'm less familiar with Ankheg but having a quick look It seems like it would be a fairly low to the ground style with considerable emphasis on grappling? Dragons and dragon-kin are always a good one, A subclass I made had a class feature inspired by Wyverns, so I feel like a Wyvern style would work well, especially since they have a pretty well defined attack pattern (Stunning strike could be re-named to fit a wyvern theme).
My more recent character is a Kensei Monk from a monastery run by a Ki-rin, He uses a spear and I visualise most of his martial arts style being derived from the movements and thrusts of the Ki-rin using it's horn as a weapon.
Manticore is a good one too since almost every monk will be starting with darts in their equipment, regardless of what subclass they choose. They could easily be re-flavoured into manticore-like needles; perhaps their fighting style involves whittling down the enemy from afar, using their superior movement to stay out of range before rushing in to finish with a barrage of melee attacks.
Displacer Beast might work well for Way of the Shadow as they get Invisibility and patient defence could be a reflection of the Displacer Beast's hard to hit nature.
The Girallon (Volo's Guide) is one which would fit well with Open-Hand, it's many arms potentially inspiring flurry of blows, it's climbing skill mirrored by Unarmoured Movement's Higher level benefits, that sort of thing.

Chimera, Griphon, Manticore and Wyvern are great because I could combine a few animal styles into one fantasy style. Like combining dragon and scorpion into Wyvern with a finishing (crit) blow of a Scorpion Kick!
