Not sure what Gi stands for but if it grants a bonus to AC, it should stack with Unarmored Defense just fine if it's what you ask for.
A gi is an outfit used in some martial arts disciplines (it's not an acronym).
It's also a relatively modern thing; historical martial artists would have worn clothes appropriate for their location and situation. (For instance, practitioners of Shaolin Kung Fu likely dressed as Shaolin monks.)
