Do you guys have any idea how to make enemy combat more interesting/difficult in D&D? I think my main problem with it is enemies/players don’t really move around a lot because of risking opportunity attacks which means enemy/player strategy is more difficult to get into play

Read Keith Amman (I don’t remember his name)’s The Monsters Know What They’re Doing. Consider the enemy before the combat (look at its stat block) and really consider what it would do beyond just ‘stab, stab; stab’.
For difficulty, if you don’t want to increase the number of enemies, make the location different. Although goblins and kobolds may not have lair actions, for example, setting the battle near their home cave/territory would present the opportunity to include traps and other surprises, as well as possibly giving them advantage on some things since they know the terrain.
