To start, it's not joycon drift, i'm using the SN30 pro plus by 8bitdo. The main problem is in MK8D (Mario kart), the game wants me to steer left for some reason. I checked the calibration of my stick, which was fine. I'm not noticing this in any other game.
Try a gamepad tester to check if the right stick is registering movement on its own. If it is, the issue may be with the controller rather than Minecraft.

I did NOT eat those hikers.
