I'm looking for guidelines for characters engaging in simple, menial tasks without the aid of magic. For example, if a character wanted to dig a pit, or build a short wall of earth in preperation for a battle, how long should that take them? Would they be able to make any checks in order to reduce that time? How do you determine the durability of the structures they create. The PH has a Shovel in its list of equipment but no instructions for gameplay. Answers in terms of minutes or rounds of action are both appreciated.
Ask what the players are attempting to create in preparation and how much time they're going to spend on it. Then, roll for the levels of quality with bonuses based on the time they chose to spend, advantage when assisted. Something more complicated might include negatives against the rolls while something simple might already include its own bonuses stacked with whatever bonuses come with the time spent.
It's just a on-the-spot idea I'm throwing out there. As already suggested, it's pretty much winging it with DM discretion.

Human. Male. Possibly. Don't be a divider. My characters' backgrounds are written like instruction manuals rather than stories. My opinion and preferences don't mean you're wrong. I am 99.7603% convinced that the digital dice are messing with me. I roll high when nobody's looking and low when anyone else can see.🎲 “It's a bit early to be thinking about an epitaph. No?” will be my epitaph.

I dont think there are any answers in the books. Going to have to use a combination of google and DM discretion for this.
If time isn't a factor, just wing it.
If it is, maybe fix a DC depending on the time allotted and the desired result, an go for an athletics check.
If it's a complex structure, you may even move to a skill challenge type of thing.

Here's on option, but it would be a house-rule:
