If in my warlock I cast hex for up to 8 hours, does that mean I can take a short rest, get back my spell slots, and still move my hex to another enemy considering I haven' bbroken concentration, or does it break during a short rest? 

Hex allows you to "use a bonus action on a subsequent turn of yours", meaning it has to be the very following turn to the one the creature affected by it dropped to 0HP.

This would therefore not allow you to let a whole short rest to pass before moving the curse, as the spell would end if one turn (6 second) passes before the use of your Bonus Action to move it.

EDIT: or at least that's how I read it, but the "on A subsequent turn" makes me wonder if it might also mean ANY subsequent turn, not just the one right after... checking if there's any Sage Advice on this, brb :P

Nevermind! I was wrong, according to THIS reply from Mr. Crawford. Theoretically, given a short rest is non-straining activity that could not include sleeping, it should indeed allow you to maintain the concentration through it and move the Hex after you completed it.
