If I'm reading this correctly, if a Shadow Sorcerer summons a Hound as a Bonus Action next to their target and then casts Hold Person, the target has disadvantage to the saving throw and all the saving throws to escape Hold Person as well?

It is "disadvantage on saving throws against any spell you cast", and I would say that the repeated saving throws to escape are still from the spell you have cast.

I'd say yes, exactly that.
It is "disadvantage on saving throws against any spell you cast", and I would say that the repeated saving throws to escape are still from the spell you have cast.
