Please forgive me if this question is silly. My rogue recently found gauntlets of ogre power and equipped them. Mostly cause they were shiny and looked cool. After attunement on DnD beyond his hit and damage for his weapons were automatically increased, but according to my DM, with sneak attack to be able to get the benifits of it I need to roll as if it's dexterity based attacks.
If I do need to use dex to get sneak attack, is there a way with DnD beyond to set which stat my attacks are based off? Or can I roll using the new stats from the guantlets?
Nothing in the description of the Sneak Attack feature requires you to actually use Dexterity when making the attack/damage roll. The requirements are that you have to use a finesse weapon or a ranged weapon - and the finesse property gives you a choice of using Strength or Dexterity, it doesn't force you to use Dexterity.
When making an attack with a finesse weapon, you use your choice of your Strength or Dexterity modifier for the attack and damage rolls. You must use the same modifier for both rolls.
Shame my Dm is disagreeing and has made it a DM rule.... Dex only for sneak attack....
That's a big red flag for a DM that's going to need replacement. Hopefully no other reductions of character ability/effectiveness creep out as your campaign goes on - nothing worse than finding out the hard way that your DM thinks of players and their characters as a nuisance which must be carefully kept from "ruining" things by actually getting to do stuff successfully.
To be fair I understand his reasoning. He says as sneak attack is a finesse based attack it should rely on dexterity and strength isn't very finesse. Also I think he is trying to just slow me down so I don't get OP. At least I know according to the rule books I'm right.

Understanding someone reasoning doesn't remove the flaws of that reasoning, though.
Flaw one is that sneak attack is not "a finesse based attack" as the DM puts it - the DM is making that and saying the reason why he has made it that was is because it already was that way (when it factually isn't that way).
Flaw two is that the DM is making choices that contradict his own other choices - you don't put a magic item into the game for the party to have unless you actually want that item to have its effect upon the game (read: you don't hand out gauntlets of ogre power unless you want someone to get a boost to their strength and all the things that entails).
I have to wonder somewhat if the DM put that item in the game for one of your party members, and is trying to slyly push you to give them up, by insisting that your class feature doesn't work with them. I have no actual idea, but when you mentioned you steal everything that's not nailed down it gave me pause. I don't know your party composition, but is there anyone in your party who is built entirely for strength?

OK, I'd like to make an insight check for that statement. :)

Yeah I have thought that.
We do have a Barbarian and Paladin that could use them to great effect.
But I also have a little friendly rivalry with the Barb, and anything to give me an edge on him.

Thanks. That's what I thought cause I am using finesse weapons.
Aaron is correct.
So you have the exact wording on hand, the rogue Sneak Attack ability specifically states:
and the finesse weapon property states:

Way I see it is he shouldn't have given me ogre strength gauntlets as loot. My character is greedy and takes everything that's not nailed down.
Yeah, I feel like 5E D&D suggests that if DMs change a rule, the change should be to make the game MORE fun for the players.
Honestly, I'd call this DM a blatant cheater if he enforces such a rule change.

Roleplaying since Runequest.
He is telling the truth lol.
The description when I found them was and I quote "there is some cool looking gloves"
Yeah I have thought that.
