Can the summoned steed of the Find Steed spell be polymorphed?
My initial thought is no: the steed isn't an actual animal, per the spell's description, but a spirit in a specified form.
However, the polymorph spell says it transforms a creature - which, as far as I know, is a pretty inclusive term in the game. And it does limit the new shape to something matching or lesser than the original shape's CR.
Could, for instance, a found steed originally a warhorse be polymorphed into a giant wasp?
Yes, as you said, the target of polymorph can be any creature (exception are shapechanger and creature with 0 hit points). The restriction is about the creature that the caster is choosing to be the new form.

Makes me excited for my upcoming campaign. Pact of the Chain Warlock. Sculptor of Flesh on my familiar when I hit level 7. Like adding a party member!
