I'm gonna post this as a comment to not take away from the main question, but I've noticed in the character sheet that the damage for the cantrip also still scales with the level. So on level 5 it would be 2 attacks with 2d10 damage each.
No, because the fine print for Extra Attack says it lets you make 2 attacks with the Attack action. Casting a spell with a casting time of 1 action uses the Cast A Spell action (2014 rules) or Magic action (2024 rules.)
Both versions of the Eldritch Knight subclass have a way to cast a cantrip and also make a weapon attack, though the details vary slightly. The feature that allows it is called War Magic.
So, starting from level 5, fighters get an extra "attack per action".
Infernal legacy Tieflings get the cantrip fire bolt at level 1.
Can a infernal tiefling fighter at level 5 cast fire bolt twice as one action?
