So, I have a Drunken Master monk who, as part of character flavor, makes alcohol using recipes given by his master. Mechanics-wise, how much time and money would it take to make how much booze?

The crafting rules in the Player's Handbook let you make progress towards crafting items at a rate of 5 gp per day (e.g. you could craft something worth 50 gold with 10 days of work.) The process costs you half the value of the items in raw materials. However, this doesn't account for the fact that brewing requires weeks of fermentation. The optional tool proficiency rules in Xanathar's Guide to Everything acknowledge this last point but don't go into specifics.
I suggest you talk to your DM and come to an agreement on how you're going to handle this. It really depends on the level of detail and realism you want out of the game.
From a real world homebrewer I would tell you that it takes at least 4 weeks to ferment a proper batch of beer. Now this is using modern equipment but maybe it will give you some idea of the time needed.
