As many of you know, Draconic sorcerers at level one get a boost to their AC making it 13+dex when not wearing armor. monk at level 1 get unarmord defence allowing them to add their wis to AC. Does that mean that a level 19 monk and a level 1 sorcerer can get 23 to their AC and you can weild a staff of power which gives you a +2 to AC and savingthrows.
Does this build allow you to have a 25 to AC without any spells or cover? I am confused.
Monk isn't "add your WIS mod to your AC". It's a separate calculation:
Unarmored Defense
Beginning at 1st level, while you are wearing no armor and not wielding a shield, your AC equals 10 + your Dexterity modifier + your Wisdom modifier.
Draconic Resilience
Additionally, parts of your skin are covered by a thin sheen of dragon-like scales. When you aren’t wearing armor, your AC equals 13 + your Dexterity modifier.
Basically, you can use Unarmored Defense to calculate your AC, or you can use Draconic Resistance. You can't add them together

There's a distinction between armor class calculation, which is your base, and bonuses on top of that. So in your example you can't combine those two as they're both AC calculations.
Some spells and class features give you a different way to calculate your AC. If you have multiple features that give you different ways to calculate your AC, you choose which one to use.
Unarmored defense isn't a bonus it is a different way to calculate (10+DEX+WIS).
