The wording here is odd, because it doesn't it says "the spell" rather than "a spell". It also doesn't restrict the benefit to spells you know from this trait.
The statement "you can’t use this benefit again until you finish a Long Rest" isn't tied to any specific spell. Really, it just means that you can't use the benefit again until you finish a Long Rest. "The spell" isn't really that odd; it's a perfectly acceptable way of referring to a noun that was already mentioned in a prior sentence.

Honestly, I think it's supposed to allow for you to quick cast any ritual you know, which is also why you only get one use of the feature at all per LR
The wording is odd. It certainly reads that you can only cast ritual spells this way once per long rest.
The benefit allows you to cast a ritual spell you have prepared using the normal casting time. (Wizard Note: Quick Ritual only works with prepared spells so you can't combine it with Ritual Adept to quickly cast spells from your spell book.)
Once you cast the spell (meaning a ritual spell), you can't use this benefit again until you finish a Long Rest.
So, the wording "this spell" implies that it is per spell, but the benefit is disabled until you finish a Long Rest, so it doesn't matter; you no longer have the benefit for a second spell.
For clarity, it should be changed to "Once you cast a spell..."

No I'd have to say that it is the "this benefit" part that's the bigger issue. It is language that, as far as I could find, is not present in any other of the feats that gives you free castings of spells. And the "the spell" and "this benefit" can at a quick reading seem to refer to just each other as they seem to refer to one specific instance of something. And then you also have the fact that, IIRC, all other feast that gives free castings allows for one free casting of each spell they give you, that makes it easier to expect that you wouldn't have to pick just one to use.
Don't get me wrong, getting one free casting of every ritual spell you happen to have prepared is bonkers and I don't think that that is what the text says or what the designers intended. I'm just saying that I can understand why someone would misunderstand it.
