I'm looking to take Simulacrum and Magic Jar as my 14th level Magical Secrets with my Lore Bard. If I cast Simulacrum on myself, can I use it to cast Magic Jar and potentially control another creature, without risking death to my main body?
If I can do this, does the possessed body have the ability to heal and regain spell slots? Is it still loyal to me? Can I make another simulacrum and have the first simulacrum body die and still keep the magic jar'd creature? Can I make a simulacrum of the Magic Jar'd creature? The possibilities seem endless, but I would like clarification on this.
Even if I can't because a Simulacrum doesn't have a soul to put into a jar (i mean, does it have a soul?!?), it would still probably be worth taking both of those spells. It would just be really cool if I could use the simulacrum to take a bunch of risks for me.
I think I would agree, except that other than a few features that talk about souls, there isn’t much in terms of rules to go on. DxJxC makes the exact reasonable argument that you would come to, and as he notes it is personal and not mechanical.
*in my best Jester impression*: “Technically” there is no wording for the simulacrum that indicates that it would cast any spell differently than whoever it is a copy of, other than not being able to regain slots.

I know that the simulacrum doesn't necessarily have proper stats, but the few details we do know is that it has half the target's HP, is incapable of gaining levels, and does not recover Spell Slots.
I think another detail to think about is the fact that Magic Jar makes clear that the target must be a humanoid, whereas the Illusory Duplicate that Simulacrum creates is considered a Construct.

A Simulacrum is a creature and is to be considered such for anything that targets or affects creatures. It has all the same statistics except the HP is halved, cannot regain HP by normal means, cannot recover spell slots, cannot become more powerful and has the creature type 'Construct'.
If the original can cast Magic Jar, so can the Simulacrum, if it has the spell slot, spell prepared, etc.
As for "soul" there is nothing to say the Simulacrum lacks a soul and it does say it a duplicate of the original creature and basically the same except for the specifically mentioned differences. So, RAW the Simulacrum casts the spells. But if the idea of a copied soul is distasteful just say the magic of the Simulacrum spell created an artificial soul or something.I mean it doesn't say it creates the Sim's mind either, yet it obviously has one. It doesn't mention these because it doesn't have to: it's already said the sim is a creature, and so it will have whatever a creature has - specifically, whatever the creature it is a copy of has.
Mechanically it works. The justifying as to why or how is the DM's job (this is why "a soul" isn't a truly defined thing - it is whatever you need it to be for things to make sense for you).

The rules don't technically prevent the simulacrum from casting magic jar so...
The posessed body can heal but uses the simulacrum's class geatures which have been modified to prevent gaining slots. It is still loyal to you. If you recast simulacrum the previous one ceases to exist (including whatever is serving as its soul).
I'm not sure if you would be able to make a simulacrum of the jarred creature, I think the simulacrum is destroyed as soon as you start casting the spell again and it requires the target to be present for the entire 12 hour casting...

That is a very tricky line of questions that I am not even going to attempt to solve RAW. I don't think the rules forbid it, but...
If I were DM, I would rule that the simulacrum can not cast the spell as it is a construct with no soul (purely a personal ruling).
Ask your DM.

They're asking specifically about Magic Jar because that spell requires the presence of a soul in the caster.

This+ a simulacrum loop where one simulacrum casts the spell again on your original body is a recepie for a BBEG plot
