So, I'm working on a Yuan-ti holy assassin type character, and wanted to make sure that being born a Yuan-ti means NO emotion ever, or if they could have real emotion.
This is one of those things to check in with your DM on. Sure, Volo's has those passages about the Yuan-Ti being devoid of emotion, though also note that Purebloods see themselves as worth less than the all the other Yuan-Ti casts. I think the write up on role playing Lizardfolk and how they would process danger and threats might be useful for roleplaying a Yuan-Ti adventurer. The rest of the party would be seen for utilitarian value as opposed to emotional investment. But, as always, make sure this is how Yuan-Ti are depicted in your game world. For all you know the DM has them largely consumed with a wrathful rage at other species, or are just weird like Cobra-La in G.I. Joe the movie.
In other words, you can't crowdsource lore to one up your DM or table. So it's best to check with your DM to see if you're interpretation is correct or whether they're amenable to the approach you're taking (though it does seem in line with at least one published version of the Yuan-Ti).

Yeah, gotta ask the DM on that. It could vary on their setting, or maybe they're willing to tweak things.
Or maybe they'll see the magic resistance racial feature and slap down the ban hammer. (Though personally I'd be willing to forfeit that feature to play a yuan-ti PC at some point, they seem pretty cool.)
Pg 99 of Volo's Guide gives you some flaws for Yuan Ti which might give you the emotional side, one of them is:
I feel twinges of emotion and I feel ashamed that I am imperfect in this way
the other is:
I worship a fobidden god
so on the first option it might be your emotions are a little more than just twinges and so the Yaun Ti heirachy send you out as the emotions mark you out as the ideal tool to infiltrate other societies and on the second, maybe the god you worship is forbidden just because it teaches you to embrace your emotions instead of repress them.
