This is a bit complicated to answer. Whatever can be prey is prey. Humanoids or other fey even. Sometimes that means eating anyone who comes across a bridge or striking a deal that contains unthinkable terms to a desperate human. Think about Rumplestiltskin, he promised to spin straw into gold to help out a woman who would be executed by the king if she didn't deliver. His cost? Her 1st born.
There is also the Dullahan, which would be recognized as the Headless Horseman, who set out each night to collect a specific soul. It couldn't speak save for the name of the person it was seeking. It was the personification of death, the grim reaper, whatever you want to call it. If you saw it at night at best you'd get a bowl of blood in the face, at worst you'd go blind in one eye. If it was looking for you though, there was no escape.
The Dearg-Due was said to be a beautiful woman married away to an older and abusive man. She was tortured until she took her own life, then rose from the grave to steal the innocent blood of anyone she can bewitch. Those who took ill inexplicably, went missing, or died were said to be victims of hers.
Just keep in mind, that these were creatures created to explain a world that ancient people could not comprehend. They had no scientific method to suss out what and why something happened. So when Bob the tailor died, it was probably because he saw a man at a cross roads with a red right hand.
What they prey on is up to you. Just think about this, what would the apex predator in a land full of apex predators prey on? What defenses would people have to prevent attacks?

In the description of the Feywild, the Unseelie Fey live among thick brambles where they hunt their prey. What do they hunt?
Beasts, unsuspecting travelers, Seelie fey perhaps.
