Lets say you were a druid or hunter. In both classes, you get an animal buddy. If you were facing off against a flying creature, such as a dragon or wyvern, and you had an animal buddy such as a owl/baby wyvern, and you gave that flying creature a growth potion. (This will only work if it can fly) now you can fly around! Would this be an effective strategy? I haven't tryed it yet, but comment what you think!

What do you mean by "Animal Buddy"? Druids get access to summoning spells, while the Wildfire Druid gets a Wildfire Spirit. "Hunters" specifically don't get an "animal buddy", whereas Ranger (Beast Master/Drake Warden) do.
Either way, the fundamental question is whether using a "Growth Potion" on a undersized flying creature can be used to turn it into a flying mount, and the answer is "yes, but".
The "Potion of Growth" does not scale as well as natural size scaling. An "Enlarged Owl" would gain advantage on strength, but would not actually increase in strength.
An Enlarged Owl would have STR 3 (w/ advantage), and would still only be "Small", which means that it couldn't be used as a mount by normal characters, and wouldn't likely have the strength to do so even if it could.
A Giant Owl has STR 13 and is size large.
However, a small Druid could use the spell Summon Beast to conjure a flying bestial spirit, which could then be enlarged to fly upon.
The Tasha's primal companion can carry a sufficiently lightweight passenger - weight limit is 90 pounds, but e.g. a kobold bottoms out at 25 pounds, so if you could keep your gear light as well (like via a bag of holding), you can 100% ride your flying companion into battle.
