Hey gang -- I'm DMing a Paladin/Warlock who is level 12/5. Having a bit of trouble wrapping my head around the spells available and spell slots they can use. I've read the Multiclassing rules in PHB but I'm afraid I don't grok them. Any advice?
Spellcasting and Pact Magic are actually seperate features that don't interact at all, even with multiclassing. So as far as spells and slots, all you need to have are the correct number of spells and slots for a 12th level paladin, and a correct number of spells and slots for a 5th level warlock.
That's one of the reasons warlock is such a popular multiclass.

Spells Known/Prepared
You're a 12th-level Paladin, you pick the spells you have prepared each day using the rules for a 12th-level Paladin. You're a 5th-level Warlock. You know as many Warlock spells as a 5th-level Warlock normally would.
Spell Slots
Your Paladin uses the Spellcasting class feature. You have all the spell slots that a 12th-level Paladin has. Technically, you would take half your Paladin levels and then consult the table in Chapter 6. But because you only have one class with the Spellcasting feature, it winds up the same. If you had levels in both Paladin and Sorcerer for example, things would be more complicated. You get Pact Magic slots just like any other 5th-level Warlock. You get two slots that recharge every Short Rest, and they're 3rd-level slots. You can use your Pact Magic and Spellcasting slots interchangeably, meaning you can cast your Warlock spells with your Spellcasting slots(useful for lower-level spells that don't need a 3rd-level Pact Magic slot), your Paladin spells with your Pact Magic slots(extra 3rd-level slots for your stronger Paladin spells), and you can even use your Pact Magic slots for Divine Smite. The only exception I can think of is that certain Warlock Invocations require the use of a Pact Magic slot, like Eldritch Smite.

They have:
4 x 1st level spell slots
3x 2nd level spell slots
3x 3rd level spell slot + 2x 3rd level pact slots (recharge on a short rest)
They can prepare up to 3rd level paladin spells and have 6 warlock spells they know of maximum 3rd level, plus 3 warlock cantrips.

Because some features specify a "warlock spell slot" or a "paladin spell slot", you should seperate them.
Paladin spell slots: Four 1st, three second, three third.
Can prepare (6 + CHA modifier) spells from the Paladin spell list, of levels 1 through 3.
Warlock spell slots: Two 3rd.
Know 6 spells from the Warlock spell list, of levels 1 through 3 (though there will be at most two 3rd level spells).
This was all incredibly helpful, thank you community!
