So, UA should have come last Monday, and I'm hoping it will come today. But if it doesn't, what do you think the reason for delay is? I'm kinda thinking they might be doing a new setting, or some races that require a bit more work. Any ideas?

I doubt we will see any new UA for a while. Everything after the Bard and Paladin UA from last September and before the Subclasses Part 4 last month was playtesting for Tasha's, and WotC has not playtested material for things they have actual announced for all of 5e at least. However, I think you are right about them working on a setting book. My money is on it being for the Dark Domains in the Shadowfell like Barovia, and the Subclasses Part 4 UA is likely for that book, but setting books are generally pretty light on material that needs UA playtesting. They usually only have 2-3 subclasses (which are likely already out for playtesting), a handful of spells (usually cantrips), and a couple new race options, and any spells are unlikely to see UA playtest since none of the ones in the SCAG or Ravinica went through UA. If I had to make a prediction, I would say that any UA we get in the next month will probably be for some new playable race or subrace, but if we don't get that, then it will probably be several months before we see anything new unless WotC needs to revisit the bard and warlock subclasses released last month.
But I could be wrong.

I'm reasonably certain that the release schedule going forward has been categorically delayed. We're getting Tasha's in November, and we know there is another book under development, most likely something Strahd adjacent from the flavor of the Bard and Warlock subclasses we saw briefly.
I'd assume everything after that is forced to slow down because of the pandemic.
Give it until October 12. UA release has been erratic in the past, this could be the time they skip another month. Heck, before August 15, 2019, UA Release jumped around a couple seasons.
I doubt any UA will be coming out anytime soon. They don't seem to playtest races anymore, unless they specifically need community feedback for them (like the Dragonmarked and other Eberron Races). If they are coming out with a setting book for Ravenloft or Innistrad, they probably (definitely) already released the UA Subclasses Part 4 for that setting. I doubt we'll see a second UA version of those, similarly to how we never saw a second UA version of the Eloquence Bard and Heroism Paladin UA.

That depends heavily on how the survey went. If either subclass needs tweaking in flavor or mechanics, then they may revisit it like they did the Phantom rogue or the Genie warlock. Also, I don't see the logic behind saying WotC is not playtesting races anymore. The races in Ravnica, MToFs, and Eberron all appeared in UA. WotC not playtesting the new races in Theros hardly makes a pattern, and saying they didn't playtest the races in Wildemount in UA doesn't count because since the whole development of that book was weird.

Hmmm... I did give some thought to Tasha's. But even through Eberron, they added other stuff that was completely different to it. I definitely predict a second or even third go at the subclasses, they weren't exactly balanced (8d10 EB, use that quicken spell, 16d10, then do the whole add cha modifier, 16d10+80. The average is 160, the max is 240. Yes, very balanced 👍👍).
I'm hoping for a race or two with this UA. Just please! We kinda need a half undead race, though revenant was not very good (I mean, a bit op and not very interesting flavour wise. Anyone can have a goal to get the treasure, but no-one should come back to life because they really want to).

The Undead Warlock was not very well balanced, but very easy to fix. Just make the doubled damage dice be once a turn, and that feature is fixed. The other less balanced abilities are similarly easy to balance.

the problem with giving real HP is that it would allow you to fully heal between encounters, so if they were gonna do something liek that it would need to be capped, or only recoverable directly after taking damage (from a hostile creature)

it would be REALLY cool if undead, instead of getting temp hp, actually got HP something like this
You are a favorite of your patron.
At the start of each of your turns, you regain Hit Points equal to your Charisma modifier if you have no more than half of your Hit Points left.
(Its weaker than survivor, but a cool mechanic)
