Hold Breath. The hydra can hold its breath for 1 hour.
Multiple Heads. The hydra has five heads. While it has more than one head, the hydra has advantage on saving throws against being blinded, charmed, deafened, frightened, stunned, and knocked unconscious.
Whenever the hydra takes 25 or more damage in a single turn, one of its heads dies. If all its heads die, the hydra dies.
At the end of its turn, it grows two heads for each of its heads that died since its last turn, unless it has taken fire damage since its last turn. The hydra regains 10 hit points for each head regrown in this way.
Reactive Heads. For each head the hydra has beyond one, it gets an extra reaction that can be used only for opportunity attacks.
Wakeful. While the hydra sleeps, at least one of its heads is awake.
Multiattack. The hydra makes as many bite attacks as it has heads.
Bite. Melee Weapon Attack: +8 to hit, reach 10 ft., one target. Hit: 10 (1d10 + 5) piercing damage.
Description
The hydra is a reptilian horror with a crocodilian body and multiple heads on long, serpentine necks. Although its heads can be severed, the hydra magically regrows them in short order.
I've found the perfect way to ramp up the difficulty for this without just beefing up the stats. In a city's underground water treatment area where the hydra has been dragging it's victims. Then, (I've personally changed the 10 in wisdom to a 13 in int just to represent it being clever) the hydra seals the exit to a large room shut with the party inside. The room fills with water and boom, the big hulking monster can no longer be damaged by fire, and is faster than the party.
13, since it already has seven and 6 X 25 = 150 and if it takes another 25 damage after losing 150 hit points it dies.
If it takes 50 damage in one turn, does it lose two heads or just one still?
25 damage - 10 healing per head
172/15 =11 and some change
34.4 rounded up is 35 rounds of combat, so 70 heads... I think
So how would one tame a hydra
So, does this thing have a breath weapon? Or am I going to have to homebrew?

i think just feed it enough that i thinks you will give it food if it does something for you
60 damage more lively but the only thing that has that much damage in my experience is being high level or a team up attack
who do you think would win in a fight a juvenal false hydra(2 heads) or an adult hydra?

This is so boring. You have a hydra - and all you could come up with for an attack is "Bite"? Fire your monster makers and hire someone else.

It actually only has one brain, its more of a savage force of nature than like how a dragon could be. One head has the brain in it amongst the others.
