You can touch a number of weapons, tools, or pieces of ammunition equal to your proficiency bonus. For one hour, these items then become capable of non lethal damage if they weren't before but also cannot kill your target regardless of how you hurt your target with them,. This means that with weapons, you could amputate or decapitate your target and they would still be alive until they are killed by something that is not affected by the spell.  If the target could not survive from what you did to them under normal circumstances (such as being decapitated) 24 hours after they were first hit with the enchanted weapon they die, but if they could survive (losing arms or legs) they do. Additionally, when this spell is used on a medicine kit, you cannot fail the saving throw to stabilize a downed ally.
