Since you are imbuing the apple with magic, maybe change it so you can use your spellcasting ability modifier for the damage roll.
Only material component? this is kinda just using an item if you think about it. Maybe it should also be somatic, but i guess it works if it's just throwing a magic apple really hard.

Thrown attacks use strength tho, I just looked it up :0 . Finesse thrown things like dagger can take dex. But of course, the rules at your table matter more than the as written :)))
This being enchantment and not transmutation implies that the Aapple has a soul or is a person and not an object. You wouldn't be able to eat the apple without being wracked with terrible guilt.
