By tasting blood at least the size of a rain drop the caster learns certain details about the blood's owner as well as how long ago it was spilled.
The caster learns the race, gender and age at the time the blood was spilled. In order to learn the name of the race the caster must be aware of the name of the race in question. If the caster has tasted the blood of the target before he can recognize the blood being from that creature/person gaining advantage on the next roll to perceive or track this target until the caster's next Long Rest. The caster can only have advantage against one target at a time.
If the target was physically transformed at the time of the spilling of the blood -- such as being polymorphed at the time -- the caster will know the target wasn’t in a true form, but will be unable to determine the true nature of the target or if he has tasted this particular target before.
* - (One drop of wet blood, consumed on casting)
