This spell creates an invisible, mindless, shapeless, Medium force that performs simple tasks at your command until the spell ends. The servant springs into existence in an unoccupied space on the ground within range. It has AC 10, 1 hit point, and a Strength of 2, and it can't attack. If it drops to 0 hit points, the spell ends.
Once on each of your turns as a bonus action, you can mentally command the servant to move up to 15 feet and interact with an object. The servant can perform simple tasks that a human servant could do, such as fetching things, cleaning, mending, folding clothes, lighting fires, serving food, and pouring wine. Once you give the command, the servant performs the task to the best of its ability until it completes the task, then waits for your next command.
If you command the servant to perform a task that would move it more than 60 feet away from you, the spell ends.

The unseen servant is mindless so any task it performs must be micromanage by the caster. It might not be able to skillfully play the drums but it would strike the drums at the rhythm and timing that the caster instructed it to do so.
If you have the spare resources handy then it seems like a perfectly reasonable use of a bonus action to set up the attack.
Which is technically a way of getting around the loading property. Also it is feasible for it to use the help action which is handy in combat.

Can you see through the eyes of the servant sort of like using it as a scout or is there another spell that's does this but without a fey pet??
Could be used for a Character who uses a Crossbow but not use the crossbow expert feat.
Basically you have 2 heavy crossbows, and you have your Servant next to you with spare bolts. After you shoot once, you drop the fired Crossbow and take the one from your Servant, then use your Extra Attack for the second shot. As a Bonus Action, you command the servant to pick up the Crossbow and reload it, while you reload the one you are holding as part of your next Attack Action.
That would be technically considered attacking, so no. The Unseen Servant isn't designed for combat, its meant to perform basic menial tasks akin to a maid.
Can you command the unseen servant to repeat the ritual used to make it by having it be told to do so? I mean it was made that way, I'd think it could do it...
How complex are the tasks the unseen servant can make? Could they craft items as long as the caster knows how to use them and/or is nearby to give them exact instructions?
Would you consider "Gut the fish" as too complex of a task for an unseen servant? I am of the thinking that "simple tasks a human servant could do" as anything that an uneducated child slave could do. Gutting fish isn't complicated once you're taught and i know children can do it
believe this is a pressure plate detection spell, acquire/reliably access something that functions like a bag of holding/portable hole to serve as storage, beware of fireball on flammable objects strapped to someone's floating disk, corpses are treated as objects by the way, put some 10ft ladders, poles and chains in storage along with unseen servant so you can effectively reposition them while looking inconspicuous; use mage hand and light cantrips to manipulate pole and chain, unseen servant manipulates ladder, bright light keeps visual perception relevant; cast fire bolt whenever door/passage defies thieves' tools/crowbar/kick
Does an Unseen Servant have the Intelligence to read a book and show me the information I seek from it?
No it is mindless, you know how to instruct it to play a simple instrument sure, and it follows your commands. Both examples you've give I would easily allow.
The more complex question is can it give a party member a healing potion?
You can have multiple Unseen Servants, as long as you have the time/spell slots to cast them. There's no language saying something happens if you cast it again, and it's not a Concentration spell. Just keep in mind: you can only command one at a time (though once commanded, they will continue performing that task).
Unseen Servant doesn't target, doesn't attack, and doesn't proc a saving throw. The only applicable Metamagics are:
Distant Spell: RAW doesn't do anything, because of the range limit clause at the end. (While you could cast it up to 120' range, it would end immediately for being more than 60' away from you.) You could ask the DM to let you apply Distant Spell to that as well.
Extend Spell: Works perfectly; doubles the spell's duration to 2 hours.
Quickened Spell: Works as written, but stops you from using your Bonus Action to command it in the same turn. (Note: Quickened Spell does not apply to Ritual casting.)
Subtle Spell: Works just fine; removes the Verbal and Somatic components. (Note: Subtle Spell does not remove the Material components.)
It's mindless, so no. It has no way to process and evaluate the information on its own, but it can understand simple parameters you set. For example: if you already know where the information is, you can tell it to fetch a specific book for you, then you can command it to open that book to a specific page.
If it can read the title of the book and the page number, you could also get it to grab a book and bookmark every instance of a specific, relevant word. For example, your friend's been turned to stone, you could get it to go and grab your copy of "Magical Maladies & Other Afflictions of the Arcane" and then place a bookmark between each page that has the work petrification on it.
