In the character sheet, the homunculus servant still uses the pre-Tasha's statistics for the homunculus servant in the tool tip section. This is when click for more information on the creature stat block from the inventory tab or extras tab.

The homunculus in extras is indeed pre-Tasha’s. Statblocks which have stats that are calculated based on Proficiency bonus aren’t supported in extras. If you look under features and traits, you can tap on that feature and see the right stat block, although you have to make some calculations. You can also homebrew a statblock and add it to extras.

When you click on the infusion, the correct description pops up but without the updated statblock. If you click on the infused item, it displays the pre-Tasha's statblock. The new statblock isn't viewable anywhere in the character sheet, at least for the Homunculus servant.
This is different for the Steel Defender, which is as you described, and the Beast Master's Primal Companion, which has it's HP and stat block also integrated into the actions tab.

If you look under Features and Traits, you can click on the feature Artificer Infusions, then scroll down the long description of infusions to Homunculus Servant, where it has the correct new statblock. Otherwise yeah, the infused item in Inventory has the old statblock. Infusing also automatically adds the Homunculus Servant to your Extras with the old statblock.
