Dndbeyond (and the game as a whole) defaults to whatever AC is higher, so if you want to be using the Unarmored Defence for your AC you'll need to calculate it yourself then do a manual override of your AC by clicking on it and setting it to whatever you want, or you can increase the necessary stats to make it higher then the Tortle natural armor.

It's more complicated than that with DDB. Unfortunately, the way it's currently programmed, the thing that makes Tortle not add the DEX modifier to the shell AC calculation winds up applying to the Unarmored Defense calculation too, so the Unarmored Defense winds up calculating as 10 + WIS instead of 10 + DEX + WIS.
So you pretty much just need to do an AC manual override if it gets to the point where your Unarmored Defense would be more than 17.

Is there a way to change Tortle from Natural Armor of 17 to the calculated Unarmored Defense for Monks if you are a Monk Class?

My Sheet does not. It is at 17 Natural Armor when my Unarmored Defense is 18.

Interesting. I thought for sure that my Tortle monk had their AC calculated properly when it went above that 17 threshold. My bad.

No, unfortunately. (I just checked with my test Tortle on the off-chance they'd fixed the issue before you set up your Monk.)
Bracers of Defense and such will add the bonus on top of either AC calculation so that could be why your AC is still better than 17.
